Coffee-Molasses Marinated Pork Chops

Marinated Pork Chops

FYI: This recipe calls for at least 2 hours of marinating before cooking.


  • 4 Bone-In Pork Loin Chops
  • 1 cup strong brewed coffee
  • 1/4 cup molasses
  • 6 fresh Thyme sprigs
  • 2 T. Apple Cider Vinegar
  • 1 T. Dijon Mustard
  • 2 Garlic Cloves, minced
  • 1/2 t. Sea Salt
  • 1/2 t. Lemon pepper seasoning
  • 1/2 t. Ground Ginger

How To:

  1. In a large bowl, combine everything except the pork chops. Pour 1/2 cup marinade into a large re-sealable plastic bag; add the pork chops. Seal bag, toss & turn to coat; Refrigerate for at least 2 hours. Cover and refrigerate remaining coffee mixture until ready to cook.
  2. For a glaze, place remaining coffee mixture in a small saucepan. Bring to a boil over medium-high heat; cook until it is reduced to about 1/2 cup, stirring constantly.
  3. When ready to cook – Pull chops from the refrigerator. Drain and discard marinade from bag. Lightly coat the grill rack with oil, using oil-soaked paper towel & long tongs. Grill chops, covered, over medium heat or broil 4 to 5 inches from the broiler for 4-5 minutes on each side or until a meat thermometer reads 145°F. Let meat stand for 5 minutes before serving. Spoon glaze over chops - Serve with a side of Asparagus & Wild Rice!
