Grilled Chicken Prosciutto & Pesto Sandwich

Grilled Chicken Prosciutto & Pesto Sandwich

  • 1-2 Pieces of our Grilled Chicken Cutlets
  • Our Store-Made Pesto Sauce
  • Fresh Mozzarella, Sliced
  • Sliced Prosciutto
  • Balsamic Glaze
  • Ciabatta Roll, Sliced
  • Olive Oil

Gather all of your ingredients, so things are ready to assemble.
Set oven to Low Broil, and place chicken cutlets on non-stick baking sheet, set on middle rack, and let grilled chicken re-heat for 10 minutes - flipping half way through. (If you are pressed for time, feel free to re-heat your cutlets in the microwave!)

Once chicken is re-heated, remove from oven and set aside. Place sliced ciabatta roll on baking sheet, and drizzle with some olive oil. Toast for a few minutes on the middle rack - Keep an eye out, you do not want to over toast! Remove roll(s) from oven, and begin to assemble your sandwich.

Smear pesto on both sides of the ciabatta roll. Place Grilled Chicken Cutlet on roll, followed by a slice or two of prosciutto, and a couple mozzarella slices. Place open-faced sandwich in the oven, on middle rack, and toast until the cheese begins to melt.

Once cheese is melted, remove from oven and drizzle with balsamic glaze before placing the other half of the ciabatta on top.

Enjoy with one of our store-made salads...Penne provolone pasta salad, Capellini Asiago Tomato Salad, Tortellini antipasto salad, or one of your other favorites!
