Summer Citrus Cous Cous Salad

Let's make something fresh, light, and packed full of seasonal ingredients! Perfect with any grilled meats, but we suggest pairing it with our Korean Marinated Flank Steak - Yum!

Summer Citrus Cous Cous Salad


  • 1 1/2 Cup Instant Cous Cous
  • 1 Large Cucumber, Seeded & diced
  • 2 Large Tomatos, Seeded & Diced
  • 1 Lemon, Juiced
  • 2 wide strips of Lemon "zest" Peel, without the white Pith
  • 3 Tbsp, Grapefruit Infused Oil, to taste *Can be substituted with the juice from 1/2 a grapefruit & 3 tbsp olive oil
  • 1/4 Cup Mint Leaves, Roughly Chopped (we used wild lemon mint from our backyard!) *Can be substituted with fresh Basil
  • Salt, to taste

How To:

  • Put Cous Cous in medium bowl. Add lemon zest strips & a drizzle of olive oil to the water, and bring water to boil.
  • Once water is boiling, remove the lemon zest strips, and pour over cous cous - Cover, and let rest for 5 minutes. Check cous cous, and fluff with a fork. If all liquid isn't absorbed, cover and let rest for another few minutes.
  • Once Cous Cous is done, add the cucumer, tomato, mint leaves, lemon juice, & grapefruit infused oil (or suggested substitute).
  • Toss everything together, season with salt & enjoy!
